정의
Aviation 은 칵테일로 클래식 진(Gin)과 리큐어(Liqueur) 마라스키노(Maraschino)와 크레메 데 바일로떼(Crème de violette), 레몬 쥬스로 만들어진다. 대부분은 이 제조법을 따르나 간혹 크레메 데 바일로떼(Crème de violette) 리큐어(Liqueur)를 안넣기도 한다. 제조된 후 칵테일 컵에 답겨서 나온다.[1]
유래
Aviation 칵테일은, 1916년 뉴욕 타임스퀘어에 위치한 호텔 월릭(Wallick)의 수석 바텐더 휴고 엔실린(Hugo Ensslin)에 의해서 만들어졌다. 당시 전통적인 조재법에 따르면 크레메 데 바일로떼가 들어가 칵테일 색이 옅은 하늘색을 띠고 있었다. 1930년에 알려진 해리 크래독(Harry Craddock)이 저술한 『Savoy Cocktail Book』에 의하면 크레메 데 바일로떼 들어가지 않는 Aviation 칵테일도 존재하였다. 이 Aviation 칵테일은 크레메 데 바일로떼만 없을 뿐 그외 제조법은 동일하다. 당시 제조법에 의하면 진(Gin) 60ml, 레몬 쥬스 15ml, 마라스키노(Maraschino) 리큐어 차 숟가락 두 스푼, 크레메 데 바일로떼 리큐어 차 숟가락 한 스푼 이었다.[2]
조주법
칵테일 셰이커에 재료인 진(Gin), 생 레몬 쥬스, 마라스키노(maraschino) 리큐어(liqueur) 및 얼음을 채워 넣고 강하게 흔들며 완성되면 그 다음에 칵테일 잔에 따른다.
